Sumac Garlic Bread
Introduction
*As seen in our Botanica at Home: Sumac video*Our version of garlic bread upgrades the classic with more flavor; more excitement; more sumac! This is an EXTREMELY delicious way to prepare bread -- one that will leave your hands messy and your tastebuds singing. We love it grilled; but using a broiler works; too.Serve this alongside a summery meal where everything comes off the grill; or with a cozy winter bowl of beans and hearty greens. It's brilliant alongside brothy clams cooked with white wine and pimentón.
Ingredients
- 1 heaping tablespoon sumac
- 1 teaspoon pimentón dulce (Spanish sweet smoked paprika)
- 1 teaspoon lemon zest
- 1 heaping tablespoon grated or minced garlic
- salt
- 1/2 cup extra-virgin olive oil
- 4 thick slices of delicious crusty bread
Instructions
In a small bowl; combine the sumac; pimentón; lemon zest; garlic; and a pinch of salt - just enough to lightly season the mixture. Add the olive oil and stir to combine well. Using a spoon and a pastry brush; brush the mixture onto both sizes of each piece of bread; making sure to get all the solids from the bowl onto the bread. Give the bread a final light sprinkle of salt.Grill or broil the bread for about 1.5 minutes per side; depending on the intensity of your flame -- just long enough for the bread to be nice and warm and the garlic to begin to sizzle and soften. (Do not overcook; or the sumac and garlic will char.)
