Introduction
One of the easiest ways to avoid a mid-afternoon crash is to keep a sweet; energy-packed pick-me-up on hand. These balls have it all: protein; fiber; healthy fats. Keep 'em in the fridge or freezer for snack time. Take 'em on an airplane to avoid paying $20 for a bad sandwich. Give 'em to a hangry friend.
Ingredients
- ½ cup almond meal
- 2 tablespoons dates
- ⅓ cup tahini*
- ½ cup unsweetened coconut flakes, plus more for rolling
- 2 tablespoons honey (sub maple syrup to make it vegan)
Instructions
Blend all of the ingredients in a food processor until you get a firm dough. Turn the mixture onto a piece of parchment paper and roll it into balls (about 1 tablespoon each). Fill a small bowl with a good handful of coconut flakes. Roll the balls in the flakes to coat completely.
